The invention of Champagne cannot be credited to one single person. Most people believe that it was Dom Perignon who invented Champagne, but in reality, several people were involved in developing the process Dom Perignon was one of those people.
When wine was first made in the Champagne area of France the bubbles that appeared in it were felt to be a fault. What appeared to happen is that the fermentation process started as normal, but stopped abruptly when the temperature dropped sharply. Thinking that the fermentation process was finished the wine was bottled and sold. When that same wine was subjected to slightly higher temperatures, the fermentation process recommenced in the pressurized environment of the bottle and bubbles formed. Because the bottles were thin, they tended to explode. As a result, the winemakers advised their clients to drink the wine before Easter.
The first nation to deliberately create wine with bubbles in it was England. There is published proof that the English were intentionally adding sugar to wine to produce bubbles as early on as 1662. The grapes used were not always the same as the grapes used in Champagne, which were Pinot noir, Chardonnay and Pinot Meunier grapes. Using the modern definition of Champagne what the English were making was not Champagne, rather sparkling wine.
The process of making Champagne is called, method champenoise. It is a complicated process that took nearly 200 years to evolve into the method used today. Dom Perignon began to develop the method in 1668.
The process of making Champagne involves 3 main actions; they are liqueur de tirage, disgorgement and Liqueur d’xpdition. Ordinary wine is brewed then additional yeast and sugar is added to the wine to begin a second fermentation that produces the bubbles. This part of the process is called liqueur de tirage and took the longest to perfect. It was not until the mid to late 1800′s that the role of yeast in the process was fully understood, so the process was not perfected until then. Veuve Clicquot figured out how to eliminate the sediment left in the bottle by the yeast, using disgorgement, in the early 1800′s.
